Brumder Brownies
Every Brumder has their own version of the recipe, but this one is best. Some people add chocolate chips and others do other things. We had a bake-off in New Mexico in the 80s and everyone won after voting for their own recipe.
But, trust me, this one is the best.
Ingredients
- •4 ounces baker’s chocolate
- •2 sticks of butter
- •2 cups of sugar
- •4 eggs
- •1 cup of flour
- •A pinch of salt
- •Some vanilla
- •Plenty of sea salt flakes (Maldon)
Method
- 1Melt the butter and chocolate in a double boiler or a microwave. The chocolate takes longer to melt in the microwave, so I usually do the chocolate for 1 minute, then add the butter for another minute to a minute and a half.
- 2While they’re melting, mix the eggs, sugar, and vanilla.
- 3When the butter and chocolate are melted, pour the mixture into the sugar-and-egg mixture quickly and stir vigorously so the hot ingredients don’t cook the egg.
- 4Then gently but completely stir the flour and salt into the mixture.
- 5Pour into a greased brownie pan and cook at 350° until almost done.
- 6When almost done, sprinkle the sea salt flakes on top and continue cooking until perfect. If you add the salt too soon, it becomes part of the batter and creates a weird crunch top. If added too late, it will not incorporate at all and will fall off when people are eating them.
Yield: one pan of the best brownies you will ever make.
